Cajun Chicken Alfredo

This is a yummy recipe - very flavorful. And only takes about 20 minutes to make! The only downside is you need a couple different spices - some I had to buy just to try this dish. But its so yummy, I actually make it enough to use up the spices (like lemon pepper) that I don't use on other things.

Ingredients
1 box linguine pasta (I had to use spaghetti tonight because I didn't know I was out of linguini)
1-2 skinless, boneless chicken breasts
Couple teaspoons Cajun seasoning
2 tablespoons butter
1 bell pepper, sliced
1 onion, chopped
2 c. heavy cream
1/2 tsp. dried basil
1/2 tsp. lemon pepper
1/2 tsp. salt
1/4 tsp. garlic powder
1/4 tsp. ground black pepper
1/4 cup grated parmesan cheese

Directions
Bring a large pot of salted water to a boil. Add pasta and cook until al dente. Drain

While cooking the pasta, cut the chicken into bite-size pieces and coat with Cajun seasoning. In a large skillet over medium-high heat, saute the chicken in the butter (about 7 minutes).


Add the bell pepper and onion. Saute a couple more minutes. Reduce heat.

Add cream, basil, lemon pepper, salt, garlic powder and ground black pepper. Heat through.


Toss with linguine and parmesan cheese. Top with more parmesan cheese and serve. (Close up pic).

Apple-Maple Turkey Burgers and French Fries



Sam and I didn't have turkey burgers till we were married! I think we were both scared because they sounded uber-healthy, and therefore, not very tasty.... ha ha! Well, these turkey burgers are out of this world! The secret is the maple-dijon sauce. This will make 4 large burgers and you can make it under 30 minutes. Ingredients
For Maple-Dijon Sauce:
1/4 cup mayonnaise
1 tablespoon Dijon mustard
2 tablespoons real maple syrup
For Burgers:
1 1/4 pounds ground turkey breast
1/4 cup real bacon bits
1/2 cup chunky applesauce (Britt's note: Buy them in the individual containers and use one container per recipe!)
1 teaspoon poultry seasoning
2 tablespoons real maple syrup
1/2 teaspoon salt
1/4 teaspoon ground black pepper
Hamburger Buns
Hamburger condiments

Directions
Set up grill for direct cooking over medium heat. Oil grate when ready to start cooking.
For Maple-Dijon Sauce: In a small bowl, stir to combine mayonnaise, Dijon mustard, and 2 tablespoons maple syrup; set aside.
For Turkey Burgers: In a medium bowl, mix together all ingredients for burgers. Wet hands to prevent sticking and shape into 4 patties. (Britt's note: have the husband do this part so you don't have to get your hands dirty - I love to cook but not a fan of touching raw meat)
Place burgers on hot oiled grill for 5 to 7 minutes per side or until done or cook them in a large skillet in 2 tablespoons of olive oil over medium high heat.
Serve on buns with traditional burger condiments and a dollop of maple-Dijon sauce. (Britt's revision - SOAK them in sauce!)

Britt's Homemade French Fries
Ingredients
Yukon gold potatoes (1 per person)
Couple tablespoons olive oil
Handful grill seasoning
Handful Lawry's seasoned salt

Directions
Preheat oven to 425 degrees. Line a baking sheet with foil.
Cut the potatoes into wedges and put them on the baking sheet.
Coat potatoes in oil. Season with as much grill seasoning and Lawry's salt as you like.
Pop them in the oven for 10-15 min. Flip the wedges. Add additional seasoning.
Put them back in the oven for 10 minutes, or until they are done as you like them. (I like mine CRISPY!!)
Serve with ketchup or ranch sauce.
