Cajun Chicken Alfredo

This is a yummy recipe - very flavorful. And only takes about 20 minutes to make! The only downside is you need a couple different spices - some I had to buy just to try this dish. But its so yummy, I actually make it enough to use up the spices (like lemon pepper) that I don't use on other things.

Ingredients
1 box linguine pasta (I had to use spaghetti tonight because I didn't know I was out of linguini)
1-2 skinless, boneless chicken breasts
Couple teaspoons Cajun seasoning
2 tablespoons butter
1 bell pepper, sliced
1 onion, chopped
2 c. heavy cream
1/2 tsp. dried basil
1/2 tsp. lemon pepper
1/2 tsp. salt
1/4 tsp. garlic powder
1/4 tsp. ground black pepper
1/4 cup grated parmesan cheese

Directions
Bring a large pot of salted water to a boil. Add pasta and cook until al dente. Drain

While cooking the pasta, cut the chicken into bite-size pieces and coat with Cajun seasoning. In a large skillet over medium-high heat, saute the chicken in the butter (about 7 minutes).


Add the bell pepper and onion. Saute a couple more minutes. Reduce heat.

Add cream, basil, lemon pepper, salt, garlic powder and ground black pepper. Heat through.


Toss with linguine and parmesan cheese. Top with more parmesan cheese and serve. (Close up pic).
